Morsel of the Month
It’s no secret that we love to cook at Athens Nutrition but like you, most nights we are just trying to get a healthy meal on the table with little fuss and no extra dishes to wash. We firmly believe that great cooking starts with smart shopping. Stocking your pantry, fridge and freezer with delicious and healthy ingredients is the first step to tasty and nutritious meals. Last month, we hosted a 5 ingredient or less cooking class in our Ardmore office and we want to share those recipes and tips with all of you. If you have the right ingre- dients, you can get a lot of flavor from just a few items. This time of year, choose delicious produce like grapes, apples, peppers, mushrooms and melon. As the weather cools, look towards squashes, sweet potatoes, hearty greens and pears. In the depths of winter (at least here in the Northeast), use your pantry items such as olives, capers, vinegars, home-dried herbs, sun-dried tomatoes or citrus to brighten your meal. When you let the ingredients shine, you do not need to “do” much cooking at all.

We are excited for you to meet Alexa Nichols who joined us this summer. Alexa has been busy working on many projects including social media campaigns, cooking classes, recipe development and client relations. We are thrilled to have her as part of our team!
Hello! My name is Alexa Nichols and I am an intern here at Athens Nutrition. I graduated with a Bachelors of Science degree in Dietetics in Spring 2017 and a Masters of Science degree in Human Nutrition in Spring 2019, both from the University of Delaware. In March of 2020 I will start my dietetic internship at NewYork-Presbyterian Hospital in Manhattan and upon completion I hope to earn my RD credentials. My long-term goal is to practice within an intensive outpatient eating disorder program working with individuals suffering from disordered eating patterns.You can most likely find me sipping on coffee in a local cafe, engaging in joyful movement, or exploring new recipes to try out in the kitchen! As an aspiring registered dietitian, I hope to implement intuitive eating and mindfulness principles to improve the health and wellness of individuals.
