A Nutritionist’s Review of the Instant Pot

The Instant Pot has become the latest in popular kitchen appliances and the positive reviews are pouring in. Do you have one? Have you seen the recipes flooding Pinterest and nutrition blogs? 

Lucky for me, I received an Instant Pot as a Christmas present.  Three recipes in and I am sold!  So far, the product has proven to be a great way to make quick, healthy and simple meals with little mess. 

Although most recipes can also be done in a crock pot or slower cooker, with the Instant Pot they won’t take all day, making the Instant Pot a great resource for a last-minute meal idea. Recipes like shredded chicken or a variety of soups are great options for lunches during the week or meal prep for extra busy evenings.

Here is one of my favorite recipes I’ve tried. Best part is, it’s not only delicious but also easy to make:

Enjoy this chicken in whole grain tortillas, lettuce cups, on top of a salad, or for just a quick bite of protein to avoid that 4pm mindless snacking!
